When we started in 2015, we never imagined reaching this moment: Barrel 1000. More than a number, it represents time, patience, and thousands of decisions made over more than a decade. We didn't invent soy sauce. We are simply trying to do it our way, from soil to bottle. What matters to us is not scale, but attention. Attention to the soybeans and wheat we grow, to the seasons, and to fermentation itself. Every barrel is stirred by hand two to three times a week, over roughly two and a half years. This barrel reflects that commitment. No shortcuts, no tricks. Just common sense, a serious dose of DIY, and trust in nature.
